Founded in 1879 by C.M. Dedman on the banks of the Kentucky River, Kentucky Owl, The Wise Man’s Bourbon, has a long and storied history that was interrupted by Prohibition.

The mouthfeel of Batch #8 is strong, rich, syrupy and the finish stays with you working its way from the spice on the back towards the front of the palate after each sip. Dedman says: „Made of four different distillates ranging from almost 5 years old, 8 years old, 11 years old, and 14 years old, I’m very excited to have been able to include distillate that I personally created for inclusion in Kentucky Owl.”
While a touch youthful by age, the 5 year old liquid added a beautiful caramel and malty quality across the mid-palate that rounded out this blend.

Apple, cinnamon, warm cobbler crust, nutmeg, caramel, vanilla pudding pop, red pepper, spiced apple cider and cinnamon
Palate
Constant battle between sweet, rich, creamy & spice. Cream cheese & pepper jelly, poached cinnamon apple, cinnamon stick, cracked black pepper, honey, rich oak, oaky tannins, spiced pear

Confiscated spreads across the mid-palate with a pleasing richness you would not expect at this proof. The hint of spices coats the back of the palate while the lingering finish draws towards the middle with citrus notes balanced by notes of caramel.
Tasting Notes
Notes of oak, caramel, mesquite banana bread and dark chocolate on the nose. The taste is of soft oak, caramel, vanilla wafer in banana pudding with a spicy citrus zest on the finish.
