Die Irish Whiskey Marke Teeling stellt heute ihre diesjährige Weihnachtsabfüllung vor, die exklusiv an den Flughäfen von Dublin und Cork erhältlich ist. Für diesen dreifach destillierten Blend aus Malt- und Grain Whiskey kam eine doppelte Gärung mit Weißweinhefe und distiller’s yeast zum Einsatz. Der Whiskey genoss ein Finish in Portwein-, Rotwein- und Sherry-Fässern, die Destillerie beschreibt ihre Abfüllung als „Weihnachten in einer Flasche“, mit Noten von braunem Zucker, Christmas pudding, Piment, süßem Toffee, Trockenfrüchten und weichen Tanninen.
Der Whiskey erscheint in einer auf 1.000 Flaschen limitierten Auflage, und ist mit 46 % Alkoholgehalt ohne Kältefiltration abgefüllt. Die 700-ml-Flaschen kostet verzollt 55 €, ohne Zoll liegt der Preis bei 42 €.
Bei Sotheby’s Live-Auktion Whisky & Whiskey | Seasonal Spirits am 7. Dezember kommen zwei doch recht außergewöhnliche Flaschen (Losnummer 278 und 279) zur Versteigerung. Die beiden Abfüllungen stammen aus der Willett Distillery aus Bardstown, Kentucky, USA, und sind vom aktuellen Papst Franziskus signiert. Das Auktionshaus ist sich bei den zu erwartenden Preise nicht ganz sicher, und gibt diese für beide mit einem Wert zwischen 1.000 und 10.000 US-Dollar an.
Die erste Flasche enthält einen 10 Jahre gereifter Bourbon aus dem Fass #3032, der nach Willetts Originalrezept destilliert wurde und mit einem Alkoholgehalt von 132,6 Proof in die Flaschen kam. Die Abfüllung erschien in der limitierten Auflage von 149 Flaschen anlässlich des zehnten Jubiläums der Wahl von Papst Franziskus zum 266. Papst mit dem offiziellen Papst-Wappen auf dem Label. Flasche No. 1, die hier zur Versteigerung kommt, ist von Papst Franziskus unterzeichnet
Abfüllung No. 2 würdigt das bevorstehende Jubiläumsjahr 2025, „Pilgrims of Hope“, und trägt den offiziellen Jubiläumsaufkleber. Nur 59 Flaschen dieses Willett Family Estate Single Barrel Bourbon #5196 „Jubilee 2025 Pilgrims of Hope“ 10 Year Old wurden abgefüllt. Der Bourbon kam mit 144.2 Proof in die Flaschen. Auch hier unterzeichnete Flasche No. 1, und diese kommt ebenfalls hier zur Versteigerung.

Zwei recht unterschiedliche Malt Whiskys aus der Aultmore Distillery finden sich heute in der Verkostung auf Whiskyfun. An der Seite des 10-jährigen des Indie-Bottlers Goldfinch aus einem first fill oloroso cask gesellt sich ein 17-jähriger des ukrainischen Abfüllers Scyfion. Ihr Aultmore beendete seine Reifezeit in einem Tequila Cask. Wie Serge Valentin schreibt, wurden diesem Finish volle 48 Monate eingeräumt, was eher als „Reifung“ denn als bloße „Veredelung“ gelten würde. Die Bewertungen der Beiden liegen allerdings dicht beieinander und weisen sie als sehr gute Whisky aus:

Distillery crowned the World’s Leading Whisky Distillery Tour at the World Travel Awards
A Highland distillery has been crowned the World’s Leading Whisky Distillery tour at the global travel Oscars – the World Travel Awards.
The Singleton of Glen Ord, in Muir of Ord near Inverness scooped the award at a ceremony in Madeira on Sunday 24 November, firmly cementing the distillery’s reputation as a must visit world-class visitor destination.
The prestigious win follows The Singleton securing Scotland’s Best Whisky Distillery Tour, also awarded by the World Travel Awards earlier this year.
The distillery visitor experience, which re-opened its doors in 2022 as part of Diageo’s £185-million investment into Scotch tourism, has welcomed 78,000 in 2024, an increase of almost a third on 2023. Guests from the local community, Scotland, the UK and around the globe, have enjoyed the immersive experience of the classic distillery tour, as well as the delicious locally sourced food served in the deli and, of course, the perfectly crafted Singleton single malt.
Located on the renowned North Coast 500 route, the distillery and brand home offers a variety of experiences for visitors from near and far. From its Malt to Cask Tour, which offers visitors a unique chance to explore onsite drum maltings, sneak a glimpse into the bonded warehouse, and even taste the award-winning malt straight from the cask; to The Singleton Distillery Tour a guided introduction to the process to the superior malt, plus a tasting of three unique expressions; as well as a circular Bar & Deli area known for hosting Singleton Sessions with local musicians and showcasing the very best of Scotland’s larder.
The Singleton Distillery has won a number of awards in the past two years. It was named Visitor Attraction of the Year at the Icons of Whisky Scotland and World Whiskies Awards 2024 in December last year, as well as a Tripadvisor Traveller’s Choice Award having been consistently rated by the public as a five-star attraction in 2023 and 2024.

Matt Hofmann gehört in den Veeingten Statten zu den Pioniren auf dem Gebiet des American Single Malts. Er war 2010 Mitbegründer der in Seattle ansässigen Westland Distillery. Die Brennerei wechselte 2017 in den Besitz von Rémy Cointreau (wir berichteten). Hofmann verließ 2023 Westland, um neue Projekte zu starten. Und kam im Zuge dessen in Kontakt mit Talking Cedar, eine Kombination aus Brennerei, Brauerei und Restaurant, die sich in Besitz des Stammes der Chehalis im Bundesstaat Washington befindet. Bis 2018 war es für Native Americans illegal, auf Stammesgebieten Alkohol zu destillieren. Die Chehalis kämpften dagegen an, und, wie auf der Website von Talking Cedar zu lesen ist, gewannen sie auch.
Talking Cedar verfügt über eine Vielzahl von Destillieranlagen, die die Produktion von Single Malts und Pot Still sowie auch Bourbon, Rye, Grain Whiskey und Blends ermöglichen. Matt Hofmann leitet jetzt das Whiskey-Programm bei Talking Cedar- Aufgrund seiner Erfahrung wird sein Hauptbeitrag zunächst Pot Still Single Malt sein, andere Whiskey-Stile sollen jedoch noch hinzukommen. Hofmann rechnet damit, dass die ersten unter seiner Leitung hergestellten Whiskeys 2028 oder 2029 erscheinen werden
Einen Meilenstein in der nachhaltigen Whisky-Produktion erreichte Suntory Global Spirits in diesem Herbst. In der Pilotbrennerei der Yamazaki Distillery in Japan wurde in der weltweit ersten direkt befeuerten Destillation mit 100 % Wasserstoff Spirit für die Whisky-Produktion gebrannt. Ein Teil dieses Spirits reift in Japan, ein anderer Teil wurde am Montag im Rahmen einer feierlichen Zeremonie in der Glen Garioch Distillery in Fässer gefüllt. Nun möchte Suntory an beiden Orten die Reifung und ihre Unterschiede beobachten.
Die Glen Garioch Distillery wurde in den letzten Jahren für 6 Millionen Pfund renoviert und mit direkt befeuerten Still und traditionellen Malzböden ausgestattet. Gemeinsam mit dem Partner Supercritical Solutions möchte Suntory Global Spirits nun auch die Befeuerung der Stills auf grünen Wasserstoff umstellen.

27 November, Scotland: Suntory Global Spirits, a world leader in premium spirits, and Supercritical Solutions Ltd., are proud to mark a milestone moment in sustainable whisky production with the official casking of the world’s first direct-fired hydrogen-distilled spirit for whisky production1 at Glen Garioch Distillery with representatives from the UK Department for Energy Security & Net Zero (DESNZ).
Following the innovative use of 100% hydrogen to directly heat the stills at Yamazaki Distillery’s pilot distillery in Japan , a portion of the resulting distilled spirit has been transferred to Glen Garioch Distillery in Aberdeenshire, Scotland, to be closely monitored and quality assessed under Scottish maturation conditions. With a sister portion being monitored in Japan2, results are to be analysed and compared as part of Suntory Global Spirits’ research into the results of hydrogen-fuelled distilling. As well as achieving net zero emissions by 2040, Suntory Global Spirits is wholly committed to ensuring that any evolution of its production processes maintain the highest level of quality at every stage.

In 2021, the WhiskHy project received innovation project funding from DESNZ through the ‘Green Distilleries’ competition to carry out feasibility studies for green hydrogen-based decarbonisation technology at Suntory Global Spirits-owned distilleries, as part of the government’s Net Zero Innovation Portfolio (NZIP). The milestone moment at the Yamazaki Distillery’s pilot distillery proved that direct-fired distillation using 100% hydrogen is feasible.
Suntory Global Spirits and Supercritical Solutions reinforced their commitment to decarbonisation with green hydrogen with the signing of a Memorandum of Understanding at Glen Garioch. Leveraging Supercritical’s novel, high-efficiency electrolysis technology for low-cost green hydrogen production, the partnership will focus on commercialising hydrogen direct firing across Suntory Global Spirit’s Scotch portfolio. The two will pursue increased scale through deployment of Supercritical’s technology on a Suntory Global Spirits-owned distilleries in Scotland whilst continuing to monitor the quality of the hydrogen direct-fired spirit as it matures.
The Glen Garioch Distillery underwent a £6 million renovation project in recent years to reinstate traditional malting floors and install its own direct-fired still. Suntory Global Spirits holds an ambition to maintain direct-fire distilling at Glen Garioch in the future through introducing innovative, zero emission fuel sources, like hydrogen, while maintaining traditional whisky production processes.
On Monday, November 25th, representatives from Suntory Global Spirits, Supercritical Solutions, and the UK Department for Energy Security & Net Zero gathered at the distillery to witness the ceremonial cask filling of the hydrogen-distilled spirit. The event also included presentations on the project’s progress and a tour of the restored distillery.

Wie Irishtimes.com vor kurzem berichtete, ist die irische Waterford Distillery von Mark Renyier in Konkurs gegangen, nachdem es ihr nicht gelungen war, frische Geldmittel für den Weiterbetrieb zu besorgen. Dieser dramatische Schritt folgt nach wochenlangen Bemühungen der Destillerie, gemeinsam mit dem Hauptkreditgeber, der HSBC Bank, frisches Kapital zu besorgen und damit die Fortsetzung des Betriebes zu sichern.
Heute am Morgen wurden die Angestellten der Destillerie darüber informiert, dass Mark Degnan und Daryll McKenna von Interpath Advisory als Konkursverwalter bestimmt wurden.

Es ist wahrscheinlich, dass die Insolvenzverwalter in den kommenden Wochen entweder versuchen werden, einen Käufer für das Unternehmen zu finden, oder Vermögenswerte wie die Whiskey-Bestände oder die Destillerie selbst verkaufen werden.
Mark Reynier hat selbst bereits eine erste Stellungnahme abgegeben und sagte:
“It’s tragic news. Anything I’m going to say isn’t going to be adequate to describe my feelings right now. It’s been a great effort from the whole Waterford team. They’ve given great dedication, done a great job. I’m sorry I’ve let them down.”

Schon so wie im Vorjahr gibt es auch 2024 wieder 12 Fässer in den Cask of Distinction von Diageo – die ultra-raren Whiskys, die vor einigen Jahren aus den Special Releases ausgegliedert wurden und nicht mehr im Handel zu finden sind, sondern vom Getränkegiganten nur mehr privat in einer eigenen Verkaufsunit angeboten werden.
Die Fässer wurden in diesem Jahr im Aldourie Castle an den Ufern des Loch Ness vorgestellt – ein Dinner von 2-Michelin-Sternekoch Jordan Bailey als kulinarischer Rahmen.
Star des Abends war das Brora 1977 #2845 Cask of Distinction, das von Master Whisky Maker Dr. Craig Wilson speziell für die Serie ausgesucht wurde, einer der ältesten Broras, der sich noch im Besitz von Diageo befindet.
Die Fässer werden nur als solche angeboten, sie werden von Diageo selbst nicht abgefüllt. Während die Preise der Fässer nicht öffentlich bekanntgegeben werden, schätzt Mark Littler, Whiskyexperte und -broker das Fass auch über 2 Millionen Pfund.
Auch die übrigen Fässer haben interessante Eckdaten, so ist zum Beispiel das Talisker-Fass aus dem Jahr 1975 das älteste, das die Brennerei jemals verkauft hat.

Douglas Laing & Co. today announces the release of a Girvan 16-Year-Old Single Grain Scotch Whisky. This special edition, finished in a single Merlot Red Wine Cask, is the fourth bottling in their exclusive Old Particular Red Wine Cask collection.
Each pairing in this collection is said to have been “meticulously selected to enhance the inherent qualities of the chosen Malt and Grain Scotch Whiskies, elevating the complexity and depth to introduce new and exciting taste experiences.”
The journey takes us to France with this exquisite 16-year-old Girvan, finished extensively in a single Merlot Red Wine Cask from sunnier regions. The well-structured, bold characteristics of Merlot harmonise beautifully with Girvan’s complexity, bringing tasting notes of „hard candy, honeyed cereal, and rich dark toffee with smooth ganache.“ The influence of French oak allows the grain to shine, offering a powerful finish filled with „cinnamon spice and ripe red fruits.“
Bottled at 48.4% alcohol strength and proudly without artificial colouring or chill filtration, this limited edition is expected to retail at £85.00 / €101.00.
Proper No. Twelve, der vor allem in den USA extrem erfolgreiche Whiskey, der von Conor McGregor im Jahr 2018 ins Leben gerufen und 2021 von ihm für 600 Millionen Dollar an Proximo verkauft wurde, muss mit schweren Turbulenzen kämpfen, nachdem der Martial Arts Fighter vor einem Zivilgericht in Irland für ein Vergewaltigungsdelikt nicht rechtskräftig eine Geldstrafe von 400.000 Dollar bezahlen muss (Conor McGregor hat angekündigt, in Berufung zu gehen und gibt an, dass alle Handlungen an besagten Abend einvernehmlich geschahen, was alle anwesenden Zeugen unter Eid beschworen).
Markenbesitzer Proximo hat in einem Statement bekanntgegeben, dass man weder Namen noch Bild von Conor McGregor weiter für die Marke verwenden wird und man sich in aller Deutlichkeit von ihm distanziert.

40ml Chivas Extra Smoky Cask Selection
20ml Espresso
20ml Coffee liqueur
10ml Sugar Syrup
Ice: Cubed
Garnish: Charred Marshmallow
Method:
Add the Chivas Regal Extra Smoky Cask Selection, fresh espresso, coffee liqueur, and sugar syrup into a cocktail shaker.
Fill the shaker with cubed ice.
Shake for about 15-20 seconds to chill and combine the ingredients thoroughly.
Strain the mixture into a chilled martini glass or your preferred glass.
Garnish with a charred marshmallow. To char the marshmallow, use a kitchen torch or carefully heat it over an open flame until it is lightly charred.

20ml Sugar Syrup
6 Fresh Basil Leaves

Method:
Add the Chivas Regal Extra Smoky Cask Selection, fresh lemon juice, sugar syrup, and fresh basil leaves into a cocktail shaker.
Fill the shaker with cubed ice.
Shake for about 15-20 seconds to chill and combine the ingredients.
Strain the mixture into a glass of your choice.
Garnish with a fresh basil leaf and a charred star anise.
