Castletown Mill im Norden Schottlands ist der Sitz der Stannergill Distillery, die von den Dunnet Bay Distillers betrieben wird. Reaching this milestone has been an immense challenge and, without a doubt, this project is hardest thing I have ever done. The past month has been particularly intense as we commissioned the boiler, milling, mash tun, compressed air, cooling water, control system (and instrumentation), and waste handling.
We have now successfully completed four 50% mashes (500kg) and are ready to move forward with our first wash distillation.
It has been a demanding journey to get here, but seeing the facility operational is deeply rewarding. Thank you to everyone who has supported us along the way. Looking forward to what comes next.
