Our next release is almost here and it’s one we’ve been looking forward to for a long time. In the coming days, we’ll release three French Oak single cask whiskies; one of which is a variation we have never before released.

In addition to the first French Oak Tawny Single Cask to be released in 2021 (TD0286), we will be releasing two French Oak Second Fill Tawny Single Casks (TD0254A and TD0017). This is the first time we’ve ever released a whisky of this type.

TD0286 French Oak Second Fill Tawny Single Cask, bottled at 45.6% was aged for over 15 years and yielded only 428 bottles.

Nose

Pine cones steeped in pomegranate molasses, orange blossom water… GRENADINE DREAM. Muscatels, ripe blackberries, fine licorice, straight up No. 1 Medium grade Canadian maple syrup, Oh, Canada! Strawberry jam, Werthers Originals, Demerara sugar. Really fun biscuit note: sweaty, sweet, chitting barley, like your head is in the germination tank. Fresh berries, bright citrus and a florists‘ shop.

Palate

Beautifully silky. One almost need not say much more. Crème Angliase, macadamias, mastic. A delicate spice and cocoa base layer, middle section plays on the licorice theme, and a top of plummy bursts, lime musk, jam, thick cream, orange musk and biscuits.

Finish

Loads of chocolate, and a hint of nutty coffee. Almonds, lamingtons, dates, mastic, delicious rum balls of heaven. Juicy fresh figs and pistacio baklava.

TD0017 French Oak Second Fill Tawny Single Cask, bottled at 47.5% was matured for just over 12 years and yielded only 425 bottles.

Nose

Apple juice, ginger cake, dark honey and date molasses together as a deep brooding aroma. Baked notes mingle the breaddy/grainy character with the spice and dark sugars… Baking gingerbread, cloves, All-Bran with honey and prunes. Chocolate cake. The lift is found in vibrant citrus notes of lemon curd, and orange peel, and there’s that lovely melon-pith-flint note of a Borderies Cognac.

Palate

Rolling texture kicks it off. Dark rosewater, marshmallows and sherbet. Lemon rind, and an Italian rhubarb amaro. Chocolate ice-cream, dark anise/licorice, a deep jammy breadth. Shortbread (malty and buttery), light coconut and vanilla sponge. A very happy marriage of rolling dark sugars and brighter floral and citrus notes.

Finish

Cocoa, sponge cake, cooking spices and gingerbread; intensely clovey. A lovely gentle grapefruit juice with Campari gives breadth and brightness (like Dante’s Garibaldi). Touch of musk in the background, and a hint of rosewater.

TD0254A French Oak Tawny Single Cask, bottled at 47.6% was also matured for just over 12 years and yielded only 280 bottles.

Nose

Dried apple, slightly overripe peaches, lemon rind, cinnamon and licorice all sorts. This is one smooth spirit. Brown sugars, nutty notes (roasted peanuts and green walnuts) and malt (cookie dough, roasting bread, Ovaltine, deep cocoa). A soft gentle spice, and excellent balance.

Palate

Lots of cocoa, sultana tea cake and prunes. Big wave of lovely fruit: candied grapefruit, pickled watermelon, ripe stone fruit, strawberries, cantaloupe and a hint of pineapple. Ever so slight touch of allspice and prunes. A touch of saltiness with all of the complex flavour going on ends up in a big umami effect. Wow!

Finish

Cocoa continues, like the coating of a lamington. Gentle tea leaves, musky cream, tapioca pudding, lemon curd, gingernut cookie and treacle. A soft fennel note, watermelon, and a light touch of yellow bell pepper. A really interesting medley, lengthy in flavour and texture.
